#ad | Who eats seasonally? 🙌🏻☀️🌱 This is something I’ve made more of an effort to do recently and it’s so easy when you have an absolute hero of an ingredient like Tesco Jersey Royal New Potatoes to use in your meals 🤩🤩🤩 ▫️ These new potatoes signify the start of spring and they’re currently in season and available at @tescofood for a limited time only, best get your skates on 😋😋😋 ▫️ I used to think all potatoes were created equally but I’ve changed my mind after trying these little beauties! They have a really earthy, nutty taste and worked beautifully in my warm new potato and spring vegetable salad with a pea and mint pesto! See below 😍😍😍 ▫️ Ingredients (serves two) -450g Jersey Royals -100g asparagus -100g broccolini -1 handful kale -1 handful spinach -2 tsp butter (or dairy free substitute) -Pinch of sea salt ▫️ For the pesto; -200g petit pois -40g toasted pine nuts -40g parmesan (or dairy free substitute) -15 mint leaves (approximately) -5 basil leaves (approximately) -2 cloves garlic -Sea salt to taste -Black pepper to taste -2 tbsp olive oil ▫️ Method - Place the new potatoes in a pan and cover with water. Add a pinch of salt and boil for twenty minutes - Trim the broccolini and asparagus and add to a pan along with the butter. Cover with a lid and allow to cook over a low to moderate heat for seven minutes, checking occasionally to ensure they’re not burning - After seven minutes, add the kale and spinach before returning the lid and cooking for another three minutes - Drain the potatoes and add to the pan along with the pesto. Mix well and allow to heat through for a few minutes before serving with a few scattered mint leaves and a sprinkle of toasted pine nuts ▫️ For the pesto; - Place the peas in a saucepan of water, bring to the boil and cook for three minutes before draining and rinsing in cold water - Put them in a food processor and add the rest of the ingredients. Blitz well until a smooth consistency is formed and no chunks remain ▫️ I like to use all the pesto in this dish but if you’re not feeling particularly saucy just half the amount 🙌🏻 ▫️ #tescojerseyroyals #tesco #glutenfree #vegan #plantbased

Super easy quinoa, green beans and prawns salad. Fresh and simple. Also, that’s what I had available at home! I reckon that a bit of avocado would complement the flavours beautifully! The seasoning is where you can really go wild. I find that oregano, lime and olive oil with a pinch of sea salt work great! For 2 people: Steam 250g of green beans and cook 1 cup quinoa according to pack instructions. Briefly cook the pranws in a pan and mix it all together.
